Cauliflower Tikka Masala

Time: 10 minutes Servings: 4
Ingredients:
1 small cauliflower, cut into florets
½ cup of plain Greek yogurt
1 (28-ounce) can of diced tomatoes, undrained
¼ teaspoon of ground cumin
½ teaspoon of ground chili
1 teaspoon of turmeric
2 teaspoons of garam masala
2 teaspoons of dried fenugreek
1 tablespoon of ginger, freshly grated
3 medium garlic cloves, minced
1 medium onion, finely chopped
2 tablespoons of olive oil
Fine sea salt and freshly cracked black pepper (to taste)
Instructions:
Press the “Sauté” setting on your Instant Pot and add the olive oil. Once hot, add the chopped onion, garlic and ginger. Cook until softened, stirring occasionally.
Add all the seasonings and cook for another 1 minute, stirring frequently.
Add the remaining ingredients except for the Greek yogurt and stir until well combined. Lock the lid and cook at high pressure for 2 minutes. When the cooking is done, naturally release the pressure for 10 minutes, then quick release the remaining pressure. Carefully remove the lid. Gently stir in the Greek yogurt. Serve and enjoy!
