Red Cabbage with Cream Sauce

Time: 20 minutes Servings: 6
Ingredients:
2 pounds of cabbage, chopped
1 cup of coconut milk
2 tablespoons of fresh parsley, finely chopped
2 teaspoons of fine sea salt
1 medium onion, finely chopped
2 cups of homemade low-sodium vegetable broth
1 tablespoon of olive oil
Instructions:
Press the “Sauté” setting on your Instant Pot and add the olive oil. Once hot, add the chopped onions and cook until tender, stirring occasionally.
Add the vegetable broth and cabbage inside your Instant Pot. Lock the lid and cook at high pressure for 4 minutes. When the cooking is done, quick release the pressure and carefully remove the lid.
Press the “Sauté” setting on your Instant Pot and stir in the sea salt, fresh parsley and coconut milk. Continue to cook for around 3 to 4 minutes, stirring frequently. Serve and enjoy!
